This TGIF Strawberry Shortcake Cupcakes recipe uses TGIF Strawberry Shortcake mixer for the strawberry shortcake flavor.
TGIF Strawberry Shortcake Cupcakes Recipe Ingredients:
1 box strawberry cake mix
1 1/3 cups TGI Fridays strawberry shortcake mixer (w/alcohol in the mix, optional)
1/3 cup oil
3 eggs
TGIF Strawberry Shortcake Cupcakes Recipe Directions:
Combine wet ingredients, and slowly incorporate box mix… whisk quickly/med-high speed for about 3 minutes until well blended…
Bake in a preheated 335-degree oven for 20 minutes (or until the tops bounce back when you touch them).
Allow cupcakes to cool.

You can core the center of the cupcake (don’t go all the way to the bottom) and use a whole filling as a surprise filling.

Whip up this delicious strawberry filling:
The recipe makes roughly 2 1/2 cups of filling
Strawberry Filling Ingredients:
2 cups diced strawberries
1/3 cup sugar
1/3 cup water
1 tsp vanilla
1 tbsp cornstarch
Strawberry Filling Directions:
In a small saucepan, combine diced strawberries, and 1/3 cup water.
Over medium-high heat, bring strawberries to a rapid boil.
Stir and reduce the heat to medium.
Make a slurry in a small bowl with cornstarch and 2 Tablespoons cold water and stir until smooth.
Add cornstarch slurry to strawberries and stir continuously until well-blended.
Cook over medium heat for 5 minutes, frequently stirring until the mixture is thick and syrupy.
Remove from heat.
Stir in vanilla.
You can fill cupcakes by using a melon baller to core out the center of the baked cupcakes and fill them before frosting.
This filling can be used chunky, or you can use an immersion blender to puree.
This strawberry filling is also delicious on ice cream sundaes, cheesecakes, waffles, scones, and more!
