Vegetable Quesadillas Easy and Delicious Recipe

This Vegetable Quesadilla recipe is crispy tortillas filled with a vegetable mixture and melted cheese to a delicious, quick weeknight dinner you’re family will love!

Dinner is my favorite part of the day.

It’s a time when my family all comes together and we catch up on the day’s events.

I like easy meals so I can get to what’s important.

We’ve been enjoying Terra’s Kitchen, a food delivery service that believes in sourcing clean, sustainable ingredients that follow the principles of the Mediterranean lifestyle.

We were sent Terra’s Kitchen Vegetable Quesadillas recipe in and ingredients.

My kiddos refer to quesadillas as “Mexican Grilled Cheese”, Terra’s Kitchen is about to introduce them to a whole new quesadilla!

We unpacked three meals for two people from our Meal Kit Delivery.

  • Garlic Mushroom Smothered Chicken (we made this last week and are still raving about it)
  • BBQ Salmon with Caramelized Pineapple Relish
  • Vegetable Quesadilla’s (this review)

Here’s everything that was inside the Terra’s Kitchen vessel.

Once it was unloaded, we set the vessel back on the porch, where it was delivered.

This is all you have to do.

FedEx will arrive tomorrow to take it.

You don’t need to make a phone call or do anything.

We don’t even hear them when they come to get it.

Let’s get started.

Ingredients:

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, sliced

3 teaspoons olive oil, divided

1 package Fajita Mix

1 teaspoon cumin

1 teaspoon chili powder

1/4 teaspoon salt

1/4 teaspoon pepper

1 cup shredded cheddar cheese, Mexican Cheese Blend or Monterey Jack cheese, divided

3 Tablespoons Favorite Salsa 

3 Tablespoons Salsa sour cream

3 flour tortillas or whole wheat tortillas or whole-grain tortillas

Guacamole:

1 avocado

2 teaspoons lime juice

1/4 teaspoon salt

1/4 teaspoon ground black pepper

The vegetables in Terra’s Kitchen Vegetable Quesadillas are red and green peppers and onions.

They are already sliced.

Sauté the Vegetables: 

Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat.

Add fajita mix, cumin, chili powder, and ¼ teaspoon each salt and pepper.

Sauté 8 minutes or until tender.

Assemble the Quesadillas: 

Sprinkle half of the cheese on 3 tortillas;

Top with remaining cheese and remaining 3 tortillas.

(If this is not enough cheese, feel free to add more–we like lots of cheese!)

Cook the Quesadillas:

Wipe skillet clean with paper towels.

Heat 1 teaspoon oil in a large skillet over medium low heat.

Repeat batches twice.

Add one quesadilla, and cook 2 minutes on each side, or until tortillas are golden brown and melty cheese.

I used a pizza cutter to slice our quesadillas into quarters.

Make the Guacamole:

Cut avocado in half. Remove the pit and scoop out the flesh into a small bowl.

Add ONLY 2 teaspoons lime juice.

Add ¼ teaspoon each salt and pepper.

Mash mixture with a fork until desired consistency is reached.

To Serve: 

Cut the quesadillas into wedges.

Place on a platter with guacamole, salsa, and sour cream.

Beautiful colors, textures, and incredible taste.
