My family has grown on the belief that food means love. It’s how I show them I love them. I choose healthy options, a variety of flavors and season with love. It was sketchy there for a bit as I returned to work outside the home. Meal planning, preparation, and clean-up after dinner were not something I looked forward to doing each week.
Back in a routine, love still gets served with every meal. It’s our time to gather together and talk about our day’s adventures.
Last week we reviewed Terra’s Kitchen Garlic Mushroom Smothered Chicken. This week we were sent another box for review and the kiddos couldn’t wait for me to get home.

We got to work unloading the vessel.
It’s a unique part of Terra’s Kitchen. The vessel arrives. It’s like a mini-refrigerator. MacKenzie calls it the “Magic Box.” It has shelves loaded with all the ingredients needed for making your menu item.
We unpacked three meals for two people from our Meal Kit Delivery.

Here’s everything that was inside the Terra’s Kitchen vessel.
Once it was unloaded, we set the vessel back on the porch, where it was delivered. This is all you have to do. FedEx will arrive tomorrow to take it. You don’t need to make a phone call or do anything. We don’t even hear them when they come to get it.
We decided to start with the BBQ Salmon with Carmelized Pineapple Relish.
Each recipe is included with step-by-step instructions that include color photos. There are also PRO TIPS to help you make the most of your recipe, ingredients, etc. I also love the wine and beer pairings section. This time the kiddos also reviewed the Table Talk section.
Then we set to cooking.
The kiddos helped Preheat oven to 450°F.
We Lined a rimmed baking sheet with aluminum foil and coated with cooking spray.
Next, we started on Cooking Rice:
In a medium saucepan over high heat, bring 1¼ cups water and ¼ teaspoon salt to a boil. Stir in jasmine rice and return to a boil. Reduce heat to low, then cover and simmer for 15 minutes. Turn off heat and let stand, covered, for 5 minutes.
While the rice water was working its way up to a boil, we made the rub.
I would like to point out that each container has detailed packaging, so you know which recipe the ingredients are to be used for. Inside are prepackaged ingredients.
Stir together brown sugar
Add 2 teaspoons chili powder
Combine paprika, and cumin in a small bowl.
The spices are fresh. We could smell each one as we opened the package. The colors are vibrant, and the kiddos thought it looked beautiful together.
We stirred it up for the next step.
The salmon was beautiful. Dark reddish-orange hues. Each piece was thick.
Sprinkle salmon with ¼ teaspoon each salt and pepper.
Rub with brown sugar mixture, pressing to coat.
Place on one side of the prepared baking sheet.
Then we started on the Preparing the Green Beans:
On the other sid the of prepared baking sheet, toss green beans with 1 tablespoon olive oil, garlic, and ¼ teaspoon each salt and pepper.
At this point, the kiddos are proud.
We slide the prepared sheet into the oven and bake salmon and green beans 7 to 9 minutes or until salmon flakes with a fork and green beans are tender.
Now it’s time to make the Pineapple Relish:
Finely chop pineapple.
Finely chop the onion.
The onion and pineapple are coarsely chopped. So it really is a microscopic effort. I rolled with it because I think it’s good for my kiddos to see me working in the kitchen. I mean, if I just dumped already finely chopped pineapple and onions into the pan, they might not think I love them so much; right?!
I let them chop the cilantro.
Now we are ready to cook the relish!
We heated 2 teaspoons olive oil in a medium skillet over medium-high heat.
Then added the onion and pineapple.
Sauté 5 minutes or until caramelized.
Stir in cilantro and salt and pepper to taste.
By now, our Salmon and green beans were done the cooking, so we removed them from the oven.
I really wish you could have smelled our kitchen. The kiddos said their mouths were watering.
Our rice was done, and so we plated the meal.
There was a chopping board, the rice pan to wash. We removed the aluminum foil from the cooking sheet and rinsed it. Three dishes. An incredible meal and no one is going to ruin it by complaining it’s their night for dishes.
We talked about who the messiest person is we know. We’ll leave that a secret!
But as the kiddos tasted the meal, the big announcement was that with Terra’s Kitchen I could easily win MasterChef!
