Bertolli Weeknight Meal Special Challenge 

Mealtime is our time as a family. It’s when we all stop life’s chaos for a few moments and come together. It’s not easy; the kiddos have homework and activities, my husband’s job is demanding and I feel like I’m going in a gazillion directions. Still, it’s worth the effort. Recently we participated in a weeknight meals challenge by Bertolli. The challenge was to put together a weekday meal that was simple and special in one hour.

Part of the challenge was to use the new Bertolli Meal Soups. I was surprised that it was in the frozen foods section. Standing in front of the freezer case, I was impressed by the variety.

There are four soups:

  • Roasted Chicken and Rotini Pasta
  • Tomato Florentine and Tortellini with Chicken
  • Chicken Minestrone
  • Tuscan-Style Beef and Vegetables.

Each package feeds two. Kroger has them for $6.97 a bag–though pricing and variety may vary by region and store.

Tomato Florentine and Tortellini with Chicken

Our family decided to celebrate it being February. The kiddos are counting down to Valentine’s Day! I selected the Bertolli Tomato Florentine and Tortellini with Chicken. It looked delicious on the package with the cheese-filled tortellini, spinach, basil and chicken (all white meat by the way!).
 
When I arrived home, and we unloaded the groceries, the kiddos wanted to help. We set the timer for one hour.
 
I left the kiddos in charge of the ambiance. They made this Valentine’s Day banner in one hour and hung it on the mantle. When they finished, they put a tablecloth on the table, found two red taper candles, and dug out their Valentine’s glasses.
 
I emptied the two bags of Tomato Florentine and Tortellini with Chicken into a pan and heated the griddle. I buttered bread slices and cut sharp cheddar cheese for grilled cheese sandwiches.

Once my grilled cheese sandwiches were complete, I cut each one into two hearts using heart-shaped cookie cutters.

I spooned the Bertolli soup into bowls and topped with grated cheese.
Strawberry Lemonade and Sprite
The kiddos made strawberry lemonade and added Sprite for a bubbly, festive drink.
Spinach and Feta Salad
While Li’l Man drank a glass of strawberry lemonade, the girls made spinach and feta salad.
 
The soup was heated, the banner made, the table set, grilled cheese on plates, and salad on the table; all we needed was Dad.

 As Dad washed his hands, I plated the dessert–mini fruit strudel.

It took us 36 minutes to complete everything, so we had plenty of time to spare in the one-hour challenge.
 
We could have made more decorations, but the kiddos said the soup smelled so amazing that they just wanted to sit down and eat it.
 
The soup was awesome! It was chunky and filling. My husband, who hadn’t eaten all day, couldn’t finish his bowl. It was so satisfying. It had a feel and flavor homemade and took less than ten minutes to heat!
 

How to Make Weeknight Family Dinners Special:

Here are some tips to make your weekday family dinner special:

  8. Make Dessert Special: Surprise your family with a special dessert to end the meal on a sweet note. It could be a homemade treat, a family-favorite dessert, or something new and exciting. Desserts add an extra touch of indulgence and create a memorable ending to the meal.
  9. Play Dinner Games: Incorporate fun and interactive dinner games to keep everyone engaged and entertained. Try conversation starters, trivia questions, or storytelling games that spark laughter and conversation.
  10. Express Gratitude: Take a moment before or after the meal to express gratitude. Encourage family members to share what they are grateful for, whether it’s the food, each other’s presence, or the simple joys of everyday life. Cultivating an attitude of gratitude enhances the specialness of the dinner experience.
