Ingredients:

  • 1 (12-16 ounce) mug sprayed with nonstick cooking spray
  • 4 teaspoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon butter
  • 2 tablespoons beaten egg
  • 1 tablespoon milk
  • 1/4 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt

How to Make Cinnamon Sugar Mug Muffin

  1. In a small bowl, combine 2 teaspoons of granulated sugar with the ground cinnamon until well blended.
  2. In the mug, microwave the butter on High for 15 to 30 seconds until melted.
  3. Using a fork, whisk in the beaten egg, milk, vanilla extract, and half of the cinnamon sugar mixture from step 1.
  4. Still using the fork, beat in the all-purpose flour, baking powder, and salt until the batter is smooth and no lumps remain.
  5. Sprinkle the top of the batter with the remaining cinnamon sugar mixture.
  6. Microwave the mug on high for 1 to 2 minutes, checking at the 1-minute mark. The muffin is ready when the center is just set and no longer raw.
  7. Allow the mug to cool slightly before enjoying your delicious Cinnamon Sugar Muffin right from the mug, or gently remove it to a small plate.
