Cook until the shrimp turn pink and opaque, approximately 3-4 minutes per side. Remove the shrimp from the pan and set aside. - Cook the Noodles:
In a separate pot, bring 4 cups of vegetable broth to a boil. Add the ramen noodles and cook according to package instructions. Once cooked, drain and set aside. - Combine Ingredients:
In the same pan used for the shrimp, add a bit more sesame oil if needed. Sauté the julienned carrot until tender-crisp. Pour in the cooked noodles and broth. Stir in soy sauce and sriracha or hot sauce. - Add Shrimp and Greens:
Return the cooked shrimp to the pan. Add the baby spinach and green onions. Cook for an additional 2 minutes until the spinach is wilted. - Garnish and Serve:
Divide the ramen into bowls. Garnish with sesame seeds and fresh cilantro. Serve hot and enjoy!
