Orange Marmalade Muffins with Cream Cheese Glaze

These homemade zesty orange marmalade muffins are moist, fragrant and will tantalize your taste buds fresh out of the oven, or add a cream cheese glaze for a delightful twist.

The Orange Marmalade Muffins use the basic baking ingredients of flour, sugar, eggs and adds the tangy twist of orange marmalade to the batter.

You might be telling your blueberry muffins to move over after sinking your teeth into one of these orange marmalade muffins.

Orange Marmalade Muffins 

 

Orange Marmalade Muffins  Ingredients

(yields 12 muffins)  

1 ¾ cups all-purpose flour  

2 tsp baking powder 

½ tsp salt  

1/3 cup sugar  

2 eggs  

1/3 cup vegetable oil  

½ cup orange marmalade  

2/3 cup milk.

Cream Cheese Glaze Ingredients:

1/2 cup Orange Marmalade

1/2 cup cream cheese, softened

2 cups powdered sugar

How to Make Orange Marmalade Muffins:

Preheat oven to 375˚. Line muffin tins with paper liners. In a medium bowl, whisk the flour together with baking powder, salt and sugar. Set aside. 

In a large bowl, beat eggs. Add oil, followed by orange marmalade and milk.  Add dry ingredients all at once and stir quickly with a flexible spatula just until no streaks of flour remain.   

Portion into paper-lined muffin tins, filling about 2/3 full. Bake in preheated oven for 18-22 minutes.

How to Make Cream Cheese Glaze Icing:

For the frosting; in a bowl beat the cream cheese with marmalade until fluffy; add in confectioners sugar and beat until smooth (adding in more if needed to achieve desired consistency).

Spread over cooled muffins.
