Microwave Beef and Broccoli

Cooking Time: 11 minutes

Serves: 4 to 6

Microwave Beef and Broccoli Ingredients:

2 Tablespoons soy sauce, divided

1 Tablespoon Sherry

1 clove garlic, minced

1/8 teaspoon ground ginger

1 pound boneless beef sirloin steak, cut into thin strips

1 Tablespoon vegetable oil

1/2 cup water

1 Tablespoon cornstarch

3 cups broccoli flowerets

Sesame Seeds, optional

Hot Cooked Rice

Microwave Beef and Broccoli Directions:

Prepare the Marinade:

In a small mixing bowl combine 1 Tablespoon soy sauce, 1 Tablespoon Sherry, garlic, and ginger. 

Whisk until combined.

Add steak to the mixture.

Stir to coat.

Marinate meat in sauce for 10-minutes.

In a 1.5-quart casserole, add oil and microwave on HIGH for 1 minute.

Add beef mixture.

Reduce microwave power to 8 and cook for 3 minutes, or until beef is no longer pink, stirring once halfway through cooking.

Remove beef from the casserole dish with a slotted spoon, reserving the cooking liquid.

Make the Sauce:

In a small mixing bowl, combine water, 1 Tablespoon soy sauce, 1 Tablespoon sherry, and cornstarch. 

Whisk to dissolve cornstarch.

Stir mixture into the cooking liquid in the casserole dish. 

Add broccoli and stir to coat.

Cover with microwaveable lid or plastic wrap.

Microwave on HIGH for 5 minutes, or until liquid thickens and broccoli is tender, stirring once halfway through cooking.

Finish Dish:

Stir beef into broccoli mixture and stir to coat.

Microwave, uncovered, at Power Level 8, for 30 seconds or until beef is heated through.

Sprinkle with sesame seeds if using.

Serve over rice.

Tip:

Beef is easier to cut into thin strips when partially frozen.

Freeze sirloin for about 1 hour before cutting.

Hot Cooked Rice in the Microwave:

Makes: 3 cups cooked rice

Cook Time: 22 minutes

Power Level: HIGH

Ingredients:

1 cup long-grained rice

2 cups Hot Water

1 teaspoon salt

2 teaspoons butter

Directions:

IN 2-quart casserole, combine rice, water, salt, and butter.

Cover with a microwavable lid or plastic wrap.

Microwave until rice is tender and liquid is absorbed about 22 minutes.

Let stand for 5 minutes. 

Fluff with a fork and serve.
