Mushroom Smothered Chicken Recipe

This easy mushroom smothered chicken recipe is tender boneless chicken in a garlic lovers mushroom sauce with sliced mushrooms and scallions. It’s one of my family’s favorite recipes. I love it because it is an easy recipe and a quick weeknight dinner recipe.

Dinner is the most important time to me.

It means coming home and sitting down with my family and catching up on their day.

In between coming home and sitting down is a time I dread.

The meal planning, preparation, and clean-up of the dinner.

This week, we were sent Terra’s Kitchen for review.

It’s a food delivery service that believes in sourcing clean, sustainable ingredients that follow the principles of the Mediterranean lifestyle.

To get started, we first visited the Terra’s Kitchen website (which is no longer active) and scrolled through what seemed like an endless variety of menus.

After much debate, my husband and I agreed we would try the Garlic Mushroom Smothered Chicken.

Then we waited, and FedEx delivered our Terra’s Kitchen vessel.

Delivery is right to the door.

The vessel is a cool concept.

It’s self-contained.

There is no box to throw away.

You simply bring it in, break the seal on the handles and open it up.

My daughter calls it the “Magic Cube”.

It’s like a mini-refrigerator.

Everything is packaged and stored inside in containers that keep the food fresh.

It was shelf after shelf of perfectly portioned, whole foods, to be used for our selected dinner.

We could not believe how much food there was tucked inside the vessel.

We set the vessel back outside the next day, where it was delivered, and FedEx automatically returns to pick it up.

No phone calls, no effort on our end.

Just set it out and forget it.

I came home from a long day at work, and honestly, I was sort of dreading it.

I enjoy cooking, but in the past, meal delivery to our door has involved a lot of prep work.

I didn’t feel like an hour-long cooking marathon, but I had committed, and I was ready.

I read through the included Terra’s Kitchen Welcome Pack.

And then I got started.

The vessel includes the menu recipe and preparation directions inside the Welcome Pack.

A couple of things I want to share before we continue.

I love the prep sheet.

Not only does it include easy-to-follow instructions with colored photographs of each step, and a breakdown of what they send and what I need, but there are beer and wine pairings as well as conversation starters!

I think this is such a classy addition.

Now it’s time to get the recipe started and dinner on the table.

Ingredient checklist:

4 boneless skinless chicken breasts

1 teaspoon salt, divided

1 teaspoon black pepper, divided

3 Tablespoons olive oil, divided

4 green onions, chopped

8 ounces mushrooms, washed and sliced

1 teaspoon garlic

1 teaspoon parsley

1 Tablespoon Parmesan Cheese

Prep Chicken:

Trim excess fat from chicken.

Place chicken breasts in a zip-top bag and pound with something heavy to an even thickness (about ½-inch thick) to create tender chicken breasts.

Liberally salt the chicken.

I opted to use Hampton Salt Truffle Infused Sea Salt.

Pepper the chicken breasts to your liking.

Cook Chicken:

Add 1 tablespoon olive oil to a large nonstick skillet over high heat.

When oil begins to shimmer add the chicken breasts.

Cook, turning once in the large skillet until chicken is browned and cooked through (about 3 minutes per side).

Chicken is cooked with a digital pocket thermometer registers 165 degrees F.

Remove to a plate and cover and set chicken aside.

Fry Scallions:

In the same skillet over high heat, with those browned bits of chicken, add 2-teaspoons of oil and of the green onions.

Fry until browned and crisp.

Remove to a plate/bowl for garnish.

Place skillet back over medium-high heat (don’t wipe out, you’ll want the scallion flavor) and add 2-tablespoons olive oil, garlic, and parsley (If not using fresh dried parsley can be used) to the pan.

Cook, stirring, for 1 minute.

Add mushrooms, ½ teaspoon salt, and ¼ teaspoon pepper.

Add remaining green onions to the pan.

Cook, occasionally stirring until mushrooms have browned and softened.

Finish Chicken:

Reduce heat to medium heat and tuck the chicken, and its juices back into the pan.

Spoon mushrooms over and allow to cook for 2 -minutes.

 I thought it was gorgeous in the pan.

I tasted it and Wow! It has so much flavor.

I plated it.

So pretty; right?! And looked at the juices! Mmmm…..

I called my family to dinner.

My husband thought I was kidding. “Already?!”

There are a couple of things I want to point out.

Terra’s Kitchen ingredients were high-quality.

I did not have to trim the chicken.

There were no roots on my scallions, and the cuts were consistent throughout the green onions.

The mushrooms were clean, sliced and no one complained of “grit.”

This is a one-pan meal.

This means I am not cleaning up after dinner.

It was seriously one pan, one plate, the meat tenderizer, and a spoon.

That’s all I used for this meal.

None of us could finish a portion.

It was so delicious and so filling.

My son even said, “This is so good, I don’t want to stop, but I can’t fit another bite in my belly!”

We served it the next right over noodles and found it to be every bit as good as the first night.

The food left us full, without that heavy feeling.
