Our Fresh Tomato Bruschetta

This fresh tomato bruschetta is simple–not just simple to make but filled with simple ingredients like tomatoes, onion, mozzarella cheese, and garlic.

It takes me back to being with my grandma as a little girl. 

Life was simple.

We ate from the garden, and when she found something we loved to eat, she made it often. 

Part of that’s carried over; I typically rotate ten to twelve recipes through our menu throughout the year.

Summer is the perfect time to make this tomato bruschetta when tomatoes are vine ripe, sweet, and plump.

For this recipe, room-temperature tomatoes are what you want. 

I prefer room-temperature tomatoes over refrigerated tomatoes anyway because they have more flavor.

One tip for this recipe is after you chop your tomatoes, season them, and let them rest for 10 minutes. 

The flavor is superior this way, with the juices released and the hint of seasoning.

My next tip is to toast your bread, and as soon as it’s done, rub a peeled garlic clove over it.

Depending on your love for the garlic flavor you want, rub the clove slowly or quickly over the warm toast.

1 Loaf French Bread, cut into 1-inch thick slices

1/2 cup olive oil, divided

2 Tablespoons balsamic vinegar

4 small tomatoes, chopped

1/4 cup chopped onion

1/4 cup fresh cilantro leaves, chopped

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 cup cubed mozzarella cheese

Fresh Basil, for garnish

How to Make Fresh Tomato Bruschetta

Prepare the Bread:

Preheat oven to 325-degrees.

Arrange sliced bread on an ungreased baking sheet.

Brush each bread slice with olive oil.

Place baking sheet on center rack in preheated oven and bake 5 minutes, or until golden brown.

Turn bread slices over and bake another 5 minutes, or until golden brown.

Make the Bruschetta:

Combine vinegar and remaining oil in a large mixing bowl.

Add chopped tomatoes, onion, cilantro, salt, and pepper.

Serve:

To each slice of toasted bread, add 1 Tablespoon of bruschetta. Top with cheese cubes.

Optional:

Place under broiler until cheese melts, about 1 minute.

Top with fresh basil as a garnish.
