Easy Pesto on Lingcod

Serve it as directed, or make the pesto and serve it up with noodles. 

We love it either way!

Ingredients to Make Pesto on Lingcod:

1 1/2 pounds lingcod

4 ounces basil, chopped

1/4 cup + 2 Tablespoons olive oil

1/8 teaspoon salt

1/4 cup walnuts

1 garlic clove, smashed

2 Tablespoons lemon juice

1/4 cup Parmesan cheese

2 pounds mixed small roasting potatoes, quartered

1 lemon cut into quarters

How to Make Pesto on Lingcod:

Make Pesto:

Preheat oven to 400-degrees.

Add basil, olive oil, walnuts, garlic, and Parmesan to a food processor.

Pulse until smooth.

Adjust lemon juice or Parmesan to taste.

Add lingcod:

Removed potatoes from the oven and place lingcod on top.

Spread pesto on top of fish and return to oven for 20 more minutes or until cod just begins to flake.

Roast Potatoes:

Toss potatoes in olive oil and salt, roast for 20 minutes.

Serve.

We love this pesto and it pairs perfectly with the lingcod.

But it is also delicious on toast or tossed with noodles.

What Comes in the Box?

When your box arrives, it’ll contain dry ice to keep the fish frozen.

My family loves seafood.
