  • 1 cup (240 ml) fat-free mayonnaise
  • 8 oz (227 g) shredded low-fat Weight Watchers Cheese (cheddar or colby cheese)

  • 6 oz (170 g) canned pimento, chopped
  • 4 oz (113 g) whole-wheat crackers, smashed into crumbs
  • Salt and black pepper to taste

Expert Tips:

  • Enhance the dish by adding broccoli florets or garnishing with green onions for a delicious twist. Both broccoli and green onions are zero points.
  • For individual servings, consider baking the macaroni and cheese in ovenproof baking cups. Adjust the baking time to approximately 20 minutes.

How to Make Weight Watchers Macaroni and Cheese:

  1. Preheat the oven to 400ºF (200ºC). Coat a 9 x 9-inch (23 x 23 cm) baking dish or a shallow 2-quart (1.9 L) baking dish with nonstick cooking spray.
  2. Cook the pasta in a large pot of boiling water over medium-high heat until al dente (just tender), about 7 minutes. Drain the pasta and transfer it to a large bowl.
  3. In the same pot with the pasta, add the soup, mayonnaise, cheese, red pepper, and pimentos. Use a wire whisk to stir until the cheese melts, and the ingredients are well mixed.
  4. Transfer the mixture to the prepared baking dish and sprinkle the top with the cracker crumb mixture.
  5. Bake, uncovered, until the top is golden, and the sauce bubbles, about 20 to 25 minutes. Slice into 6 pieces and serve.
