Recipe: Orange Marmalade Candied Carrots

My kiddos don’t like cooked carrots. They claim this anyway. I whip up this dish and they devour it. Sometimes you just have to pick your battles.

This recipe is easy. You can slice the carrots, chop the carrots into “coins”, or just put them in whole. It’s up to you. The marmalade adds a nice flavor.

Marmalade Candied Carrots Recipe Ingredients:

  • 2 pounds carrots, peeled, sliced diagonally
  • 2/3 cup orange marmalade (this Instant Pot Orange Marmalade recipe is easy and delicious)
  • 2 tablespoons brown sugar
  • 2 tablespoons butter
  • 2 tablespoons rum, optional

Marmalade Candied Carrots Direction:

Boil carrots about 10 minutes until they are a tender crisp.

Transfer carrots to an oven-safe dish.

Stir marmalade into the carrots until it has completely melted.

Combine brown sugar, butter, and rum, if using, in a small saucepan.

Cook over medium heat until butter and brown sugar melt.

Remove from heat.

Pour over carrot mixture.

Bake in a 350 degree oven for 20 minutes. Toss gently and serve warm.

Serves 8.
