Recipe: Garlic Rosemary Chicken with Sun Dried Tomatoes

This dish has a summer feel to it making it the perfect comfort food for winter or a tasty summer dish. It is sinfully easy and filled with flavors that will have you coming back for more.

4 chicken breast halves, bone in
8-10 Sun Dried Tomatoes
2 medium Onions, quartered
2 Tbsp. extra-virgin Olive Oil
4 garlic cloves
1 tsp dried rosemary
fresh ground pepper
1 Tbsp. lemon juice

Preheat oven to 400 degrees
Rinse chicken an pat dry.
Line large baking dish with a large sheet of parchment paper, leaving enough to cover the dish when folded.
Place the tomatoes in the dish and cover with the chicken pieces, skin side up.
Add onion quarter around the chicken
Drizzle Olive Oil over chicken and onions.
Crush garlic cloves through garlic press over chicken.
Sprinkle rosemary and pepper over chicken and drizzle lemon juice over all.
Cover loosely and bake 45-minutes. Open paper and cook 15 minutes more, until chicken is golden brown.
Serve chicken and onions topped with 2-3 slices of tomato.
