Cranberry Nut Bread

This cranberry nut bread is delicious with sweet orange and tart cranberries. It’s perfect anytime, but a special treat for the holidays.

Cranberry Nut Bread

Ingredients

2 cups all purpose flour

1 cup sugar

1 1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1 teaspoon orange zest

1 egg, beaten

2 Tablespoon vegetable oil

3/4 cup orange juice

1 1/4 cup fresh cranberries, chopped

1/2 cup chopped pecans (optional)

How to Make Cranberry Nut Bread

Preheat oven to 350 degrees

Grease the bottom only of a loaf pan (either a 9×5 or (2) 7.5×3.5).

Combine flour, sugar, baking powder, baking soda, and orange zest in a large bowl.

In another large bowl mix together egg, oil and juice.

Slowly add egg mixture to the dry ingredients and stir until combined.

Stir in nuts and berries. 

Pour into prepared pans.

Bake on center rack of preheated oven for one hour (large loaf) or 45 minutes medium loaves.

Bread is done when toothpick comes out clean.

Turn loaves out on to wire rack and allow to cool. 

Slice and enjoy.
