Made with Corona, a drink that takes Briana back to a trip to Mexico with her mom and boyfriend (now her husband), these cupcakes are a creation that reminds us we should all reminisce.

These cupcakes are moist and bring the flavors of the tropics home—corona-flavored cupcakes filled with Lime custard and topped with a buttery Margarita buttercream.

Ingredients

  • [b]Coronoa Cupcakes:[/b]
  • One box of yellow cake mix
  • One bottle Corona
  • 1/3 cup vegetable oil
  • Three eggs
  • [b]Lime Filling:[/b]
  • One can sweetened condensed milk
  • One package Kool-Aid lemon-lime
  • Two packages of margarita drink mix (single-serve size)
  • 1/3 cup lime juice
  • [b]Margarita Frosting:[/b]
  • 1 1/4 cups butter
  • 4 cups powdered sugar
  • 2 teaspoons meringue powder
  • 1 tablespoon corn syrup
  • 4 tablespoons margarita mix
  • 3 tablespoons tequila

How to Make Corona LimeRita Cupcakes with Lime Custard Filling

Corona Cupcake Directions: 

  1. Bake in 345° oven for 20 minutes
  2. Let cool completely and then cut holes out of the middles for the filling.
  3. [b]Lime Filling Directions:[/b]
  4. Whisk well and spoon/pipe into cupcakes

 

Margarita Frosting:

  1. Beat the butter at high-speed for five minutes
  2. Once the butter is beat fluffy, slowly add the remainder of the ingredients
  3. Add green food coloring as desired
  4. Transfer to piping bag and pipe on cupcakes
