White Chocolate Cranberry Granola Bars

The Perfect Pick Me UP!

This White Chocolate Cranberry Granola Bars recipe is a great go-to when something healthier is needed for snacking. I bake a batch and cut into bars and pack for our weekend hiking adventures, or just to place on a plate, within hands reach to add a healthier alternative to cookies and cakes!

1/4 cup sugar
1/4 honey
1/4 cup maple syrup
2 T peanut butter (reduced fat)
1 egg white
1 Tablespoon Evaporated Milk
1 teaspoon vanilla
1 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon all-spice
2 cups old-fashioned oats
1-1/2 cups crisp rice cereal
1/3 cup white chocolate chips
1/4 cup cranberries
1/4 cup chopped walnuts

Directions:

1. In a large bowl, combine the first seven ingredients. Combine the flour, baking soda, cinnamon and allspice; stir into sugar mixutre. Stir in the oats, cereal, chips, cranberries and walnuts.
2. Press into a 13×9 baking pan, coated with cooking spray.
3. Bake at 350 degrees for 18-20 minutes or until golden brown
4. Cool on wire rack. Cut into bars.
Store in airtight container
