By now you’ve heard someone mention InstantPot.

It’s an appliance that I’m learning I simply cannot do without.

Back in the early 1990s, my mother-in-law came home from work and pressure cooked dinner.

It was the first time I had ever seen anyone do something with a pressure cooker besides canning.

I was amazed.

My husband and I bought a pressure cooker, and it looked like something the caveman pounded out of their first discovery of aluminum.

It was bulky.

It also terrified me to use it.

Blowing up my kitchen was not something I felt complimented dinner.

So, after a couple of uses, where I forced my husband to “do something with that ticking release valve,” the pressure cooker was abandoned.

Instant Pot has now entered my kitchen and, people, I’m not turning back.

It plugs into an electrical outlet for more regulated heat and the pre-programmed settings take the guessing out of how long to cook something.

Our schedules are heaped, and I use to take the lazy way out and pull through a drive-thru, then curse myself because I should feed my family better.

Now, we come home, and I throw all the ingredients into the InstantPot and ba-bam!

Dinner is made!

Even if I forget to thaw out the chicken before I leave for work in the morning, I can pull it out of the freezer, throw it into the pot and it is ready in no time.

InstantPot is a great sidekick.

The other night I made Lemon Mustard Chicken with Potatoes in 18 minutes.

That’s less time than it would have taken just to boil the potatoes on the stove!

I’m inherently lazy, and I’m feeding my family delicious, homecooked meals in less time than I can drive to the fast-food joint, drive-thru, order and get home with the food.

If you have a stovetop pressure cooker, you can still use these recipes, but you’ll have to adapt them and experiment with timing, as different brands cook at different speeds. 

Tip for converting recipes to slow cooker recipe: Use The Instant Pot “normal” setting. It’s the same as “low” on most slow cookers.
