  2. Add Milk: Pour 1 ½ cups of the chocolate milk into the pot and cook, stirring occasionally, for about 1-2 minutes to combine.
  3. Mix Cornstarch and Milk: In a small bowl, whisk together the remaining ½ cup of chocolate milk with the cornstarch until smooth and lump-free. Add this mixture to the pot.
  4. Cook the Pudding: Increase the heat to medium and bring the mixture to a boil, stirring constantly. Boil for 1 minute.
  5. Thicken the Pudding: Reduce the heat to low and continue cooking until the pudding thickens, about 30 seconds.
  6. Pour and Chill: Divide the pudding among six small ramekins, covering each with plastic wrap pressed directly onto the surface to prevent a skin from forming. Refrigerate until chilled.

Ingredients

  • 1-ounce bittersweet chocolate
  • 2 cups low-fat chocolate milk, at room temperature, divided
  • 3 Tbsp cornstarch
  • 6 Tbsp Aerosol Whipped Cream

Instructions

  1. In a small pot, over very low heat, melt chocolate, stirring constantly, about 1 minute. Add 1 1/2 cups milk and cook, stirring occasionally, to combine, about 1 to 2 minutes.
  2. Meanwhile, in a small bowl, mix remaining 1/2 cup milk with cornstarch until well blended with no lumps; add to the pan with chocolate-milk mixture.
  3. Increase heat to medium and bring to a boil, stirring constantly; boil for 1 minute.
  4. Reduce heat to low and cook until thickened, about 30 seconds; pour about 1/3 cup pudding into each of 6 small ramekins
  5. Cover ramekins with plastic wrap, pressing plastic down onto the surface of pudding (so skins don’t form) and refrigerate until chilled.
  6. When ready to serve, top with whipped cream.
  7. Yields about 1/3 cup pudding and 1 tablespoon whipped cream per serving. (6 servings total)
  8. You can serve this pudding warm, too.
  9. Trying topping with sliced bananas or strawberries for a festive taste.

Notes

Garnish this pudding with a few gratings of dark chocolate instead of the whipped cream if you wish. This also makes a delicious dip for fresh berries and other fruits.
