Today’s Best Recipe is Thai Iced Coffee with Coconut Milk.

This Thai Iced Coffee takes me back to when I was 18; I moved to Miami, Florida, to be a nanny.

It was a great experience–one that I would recommend to any young woman.

While in Miami and taking in the sites, I arrived at Calle Ocho, familiar as “Little Cuba,” with street-side vendors and these windows that were portals to my energy bank.

I’m not kidding.

It was at one of these windows I discovered Cuban espresso.

It was strong coffee–unyielding, and it gave me pep.

It was a good cup of coffee.

From being a nanny to a new bride, I remember working graveyards for a newspaper, and my body’s time clock would drag come one o’clock in the morning.

As I sat preparing for print with heavy eyelids, my cubical buddy reminded me of the power of espresso, and on break, he made us each a cup.

It was how I survived ’til dawn and kept having a social life!

But Miami is hot, and eventually, I learned the magic of Iced Coffee.

This Thai Iced Coffee recipe with Coconut Milke recipe combines my love for espresso with a taste of the tropics in coconut milk.

While traditional Thai coffee is made with condensed or evaporated milk (find this recipe at the bottom of this page), we kept the recipe dairy-free by using creamy coconut milk instead.

It’s one of our favorite iced coffee recipes.

The Key to the BEST Coconut Milk Thai Iced Coffee

For the best results, you’ll want your coffee to be STRONG.

A strong espresso will give you the bold coffee flavor that makes this delicious coffee drink stand out.

This will make your coconut milk Thai iced coffee super yummy and not watered down.

A Tip for the BEST Thai iced coffee is to freeze espresso coffee in an ice cube tray and use these coffee ice cubes rather than ice made from water.

You can also swap your ice cubes with coconut milk ice cubes to maintain a creamier texture as they melt.

For best results, make sure that you use full-fat coconut milk, and the higher quality of your brewed coffee, the higher quality of your finished iced coffee will be.

You can start with cold brew coffee for this homemade Thai iced coffee.

Thai iced coffee is better made with freshly brewed coffee. That being said, if you use leftover coffee, slightly reheat it before continuing with the recipe.

Thai Iced Coffee with Coconut Milk Recipe Ingredients:

Espresso (strong brewed coffee)

3 ounces cold water

1 Tablespoon vanilla extract

simple syrup

A few leaves of mint

2 ounces of coconut milk

Ice cubes

How to Make Thai Iced Coffee with Coconut Milk:

Infuse the coconut milk with mint* and mix in vanilla simple syrup.

Depending on the coconut milk, you might need to dilute it with a little water to get it to a creamy texture.

Pour espresso into a glass.

Add cold water, then place ice cubes in the glass; some will melt as it cools the espresso, diluting the drink more.

Pour the sweetened, mint-infused coconut milk on top.

Enjoy!

*Combine coconut milk and fresh mint leaves in a saucepan over medium heat.

Heat for 5 minutes until bubbles appear around the edge of the pan.

Remove from heat and let steep for 20 minutes.

Strain infused coconut milk through a fine-mesh sieve into a bowl, pressing on the mint with the back of a spoon.

Thai Iced Coffee with Coconut Milk Recipe Tip

Make the coffee and the sweetened condensed coconut milk ahead of time and keep it in your refrigerator.

Be sure to whisk your coconut before pouring it over your coffee, as it tends to separate as it sits.

  • Apply one teaspoon of ground cardamom and 4-6 Tablespoons of sweetened condensed milk to the iced coffee. Chill it and serve as instructed.
  • Add half a teaspoon of vanilla extract or pure almond extract and 4-6 Tablespoons of sweetened condensed milk.
  • Make it an evening drink by adding Bailey’s Irish cream, Cointreau, Kahlua, or your favorite liqueur.
  • Add 1/2 teaspoon of almond extract for a nutty flavor.
  • Try pouring over a scoop or two of vanilla ice cream.

  • ½ teaspoon cardamom

  • 1 tablespoon heavy cream
  • 4 ice cubes

Combine all ingredients and pour over ice cubes.
