Focaccia Schiacciatais

Schiacciatais, the Tuscan version of focaccia, found all over Italy’s central regions. 

This is the recipe listed here.

The term schiacciata means “squashed” or “pressed,” so, when you make the Tuscan version of ; focaccia, you do just that by pressing the dough down with your fingers.

This easy recipe for Rustic Focaccia is a soft bread, with a little crispness topped with olive oil, grape tomatoes, and rosemary.

Ingredients for Easy Rustic Foccacia

1 loaf frozen bread dough

1.5 Tablespoons Olive Oil

4 Cloves Coarsely Chopped Garlic

1.5 Cups Grape Tomatoes

Fresh Rosemary

Coarse Sea Salt

Cornmeal

How to Make Foccacia

1.) Preheat oven to 375 degrees.

2.) Thaw bread dough.

3.) Lightly grease a 13″x9″ dish.

4.) Sprinkle the bottom of the dish with cornmeal. 

5.) Roll out bread dough and press dough until it is big enough to cover the bottom of your baking dish.

6.) Make indentations all over the soft dough using your knuckles.

7.) In a skillet, with 1/2 Tablespoon Olive Oil, grill the tomatoes with the garlic cloves, just until the tomatoes start to “blister”.

8.) Brush the dough with the remaining Olive Oil and place the tomatoes, garlic, and rosemary on top of the dough.

Feel free to add other things like sliced onions, pine nuts, or coarse salt, olives, etc.

9.) Bake in a preheated oven, top rack, until lightly golden brown, about 20-25 minutes.

Tips:

  • Brush With Olive Oil: Don’t be afraid to add a serious amount of olive oil, as it provides flavor and moisture to the dough. Even when it comes out of the oven and is done baking, you’ll want to do a final olive oil drizzle and add the rosemary leaves so that they infuse the focaccia as it cools. 
  • Coarse Salt: Before putting it in the oven, sprinkle it with coarse sea salt. It really adds to the flavor of the Focaccia.

  • 4 Cloves Coarsely Chopped Garlic
  • 1.5 Cups Grape Tomatoes
  • Fresh Rosemary
  • Coarse Salt
  • Cornmeal

Instructions

  1. Thaw bread dough.
  2. Lightly grease a 13"x9" dish.
  3. Sprinkle the bottom of the dish with cornmeal.
