Lamb Chops with Jalapeno Mint Sauce

Today’s Best Recipe is delicious lamb chops with jalapeno mint sauce.

From start to finish, dinner is on the table in about an hour.

Serve with muddled-herb potatoes, and it’s a flavorful dinner.

This recipe is a twist on the traditional mint jelly accompaniment–you can even leave out the fresh jalapeno!

Lamb Chops with Jalapeno Mint Sauce

Makes 4 lamb chops

Total Time: 20 minutes

Ingredients:

  • 4 lamb loin chops
  • 1 tablespoon (about 15 grams) all-purpose flour
  • 1 tablespoon (about 15 grams) spicy steak seasoning
  • 1 tablespoon (about 15 milliliters) Olive Oil
  • 120 milliliters (1/2 cup) chicken broth
  • 120 milliliters (1/2 cup) jalapeno jelly*
  • 1 jalapeno, seeded and sliced (optional)
  • 30 grams (about 2 tablespoons) chopped fresh mint

*Note: While it’s challenging to provide an exact metric measurement for jalapeno jelly due to its consistency, you can use a kitchen scale to measure it by weight for accuracy if needed.

How to Make Lamb Chops with Jalapeno Mint Sauce:

Trim the fat from the lamb chops.

Combine flour and steak seasoning on a large plate or in a large resealable plastic bag.

Dredge both sides of each lamb chop until evenly coated.

In a large saute pan over medium-high heat, heat the oil for 2 minutes.

Add chops and sear for 5 minutes on each side (medium rare).

Remove chops from the pan and keep warm.

Add the chicken broth to the pan, scraping any brown bits. 

Stir in the jelly and the jalapeno.

Bring mixture to a boil over medium heat, stirring until jelly melts.

Reduce heat and simmer for 3 minutes.

Remove from heat and stir in mint.

Plate chops and drizzle about 3 Tablespoons of sauce over each chop.

*Substitute Jelly

For less spiciness and more of a sweeter flavor, try substituting seedless raspberry jelly for jalapeno jelly.

Can’t Find Lamb Loin Chops?

Boneless, skinless chicken breasts or thighs also work well.

Just saute them for about 6 minutes on each side.
