With summer fading, we’re looking for lighter, easy recipes to snack on. My kiddos love pie, but I wouldn’t say I like an oven being on for an hour, and pie crust can be complicated. I created this EASY Fruit Tarts Recipe to bring summer flavors and add the benefits of whole grains. The tart shell tastes a lot like a Waffle Cone.
I want my kiddos to have a nutritious diet, and I don’t think that means having to give up things that taste good. The U.S. Dietary Guidelines recommend that adults eat 48 grams[1] or more of whole grains daily, and children ages 4-13 years old eat a minimum of 40-48 grams per day[2]. Studies have shown, however, that the majority of children and adults are not consuming the recommended amount of whole grains.

- 12 slices of Nature’s Harvest® Bread (I used Nature’s Harvest® Butter Top Made With Whole Grain White Bread)
- 2 Tbsp butter, melted
- 1 Can Pie filling (I used Cherry)
- Whipped Cream (I went easy with Redi-Whip)
EASY Fruit Tarts Recipe Directions:
- Preheat oven to 350-degrees Fahrenheit
- Use a rolling pin to press each piece of Bread flat
- Use a pizza wheel or knife and trim the crust to make the bread slices square
- Using a pastry brush, brush the melted butter over each slice of bread.
- Make a slice approximately one inch long in the middle of the bridge, on two sides.
- Gently overlap the “tabs” from the slits and press them into a muffin tin
- Repeat until you have filled all tins
- Bake at 350 degrees Fahrenheit for 10-15 minutes. You may want to cover the “points” of the tart with aluminum foil to keep it from burning.
- Remove from oven and let cool completely in the tin.
- Remove the bread cup, fill with pie filling, and top with your whipped cream!
