Then my mail brought 150 Best Cupcake Recipes and I realize my experience with cupcakes is amatuer–and trust me when I tell you I’ve eaten a LOT of cupcakes!

I felt like I was a contender even with all the television shows and bakeries indulging my senses with all things cupcake. I cooed and squeed over their beauty. I rolled my eyes back in sheer ecstasy at the very taste of one and now, I’m ready to kick up my cupcake game.

There are flavors that just the thought of having me salivate add to the experience of beautiful decorating and I think I’ll never pull myself out of the pages long enough to try my culinary skills at baking one.

Let’s talk. Hasson has created a book with recipes easy enough you’ll feel like committing a weekend to baking them all. There’s something for everyone, including 25 vegan recipes.

In addition she shares decorating tips and techniques for everything from rustic to fancy and if that isn’t spectacular enough, there’s even themed decorating ideas for weddings, birthdays, holidays and more!

No skill is required. There’s a tools and equipment glossary and an ingredients glossary. We’re talking, she’s got it all covered!

Here’s one that grabbed my attention right from the start:

Candy Bar Cupcakes

Yield : Makes 12 cupcakes

Ingredients:

  •  1¼ cups all-purpose flour
  • ½ cup  unsweetened Dutch-process cocoa powder, sifted
  • ¾ tsp baking soda
  • ¼ tsp salt
  • 1 cup  granulated sugar
  • 1/3 cup  vegetable oil
  • 1 tbsp  finely ground coffee
  • 1 egg
  • 1 tsp vanilla
  • ¾ cup buttermilk
  • 2 large candy bars (such as Milky Way), cut into chunks
  • About 1 cup  frosting (see frosting suggestions in Notes)

How to Make Candy Bar Cupcakes

Preheat oven to 350°F (180°C).

1. In a small bowl, mix together flour, cocoa powder, baking soda, and salt.

2. In a large bowl, whisk together sugar, oil, coffee, egg, and vanilla until smooth. Alternately whisk in flour mixture and buttermilk, making three additions of flour mixture and two of buttermilk, beating until smooth. Stir in chopped candy bars.

3. Scoop batter into a muffin pan, lined with paper liners. Bake in preheated oven for 22 to 27 minutes or until the tops of the cupcakes spring back when lightly touched. Let cool in pan on rack for 10 minutes. Remove from pan and let cool completely on rack. Top cooled cupcakes with frosting.

Variaton: Substitute ½ cup (125 mL) whole candy-coated chocolate pieces, such as M&M’s or Smarties, for the chopped candy bars.

Notes: Frosting suggestions: Chocolate Fudge Frosting, Peanut Butter Frosting, or Caramel Frosting.
