I think a lot of it concerns the fact that I can balance my diet with my family. There’s no special food, no deprivation. It’s all points, and I control what I eat. If I want chocolate cake, I can have chocolate cake… I just have to use the points for it!

Be sure to buy dark chocolate with a high cocoa percentage—70 to 85 percent for the most decadent taste experience.

Double Chocolate Pudding

Ingredients:

  • 1 ounce bittersweet chocolate
  • 2 cups low-fat chocolate milk, at room temperature, divided
  • 3 tablespoons cornstarch
  • 6 tablespoons Aerosol Whipped Cream
  • Sliced bananas or strawberries for garnish (optional)

How to Make Weight Watchers Double Chocolate Pudding 

  1. In a small pot, melt the bittersweet chocolate over very low heat, constantly stirring for about 1 minute.
  2. Add 1 1/2 cups of chocolate milk to the melted chocolate and continue cooking over low heat, occasionally stirring, until well combined, about 1 to 2 minutes.
  3. In a small bowl, mix the remaining 1/2 cup of chocolate milk with cornstarch until well blended and no lumps remain.
  4. Gradually pour the cornstarch mixture into the pot with the chocolate milk mixture, stirring constantly.
  5. Increase the heat to medium and bring the mixture to a boil, continuing to stir constantly. Let it boil for 1 minute to thicken the pudding.
  6. Reduce the heat to low and cook the pudding for an additional 30 seconds until it reaches a thick consistency.
  7. Divide the pudding evenly into 6 small ramekins, filling each one with about 1/3 cup of pudding.
  8. Cover each ramekin with plastic wrap, pressing the plastic down onto the surface of the pudding to prevent skin from forming. Refrigerate the ramekins for at least 2 hours until the pudding is thoroughly chilled.
  9. When ready to serve, remove the plastic wrap and top each pudding with a dollop of Aerosol Whipped Cream.
  10. For a festive touch, garnish the pudding with sliced bananas or strawberries if desired.
