Rocky Road Brownies Recipe

Rocky Road Brownies! A rich chocolate brownie base topped with a layer of puffy gooey marshmallows sprinkled with peanuts and drizzled with chocolate frosting.

This recipe is for a homemade delicious treat, but you can skip the “from scratch” brownies and use a brownie box mix and still partake of the chocolaty goodness.

You’ll love this brownie recipe, so I want to share that you can mix the dry ingredients together and keep them in an airtight container, with a note on adding the wet ingredients.

Rocky Road Brownies Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 cup (113g) shortening
  • 1/2 cup (113g) butter or margarine
  • 1 cup (240ml) strong, brewed coffee
  • 1/4 cup (30g) unsweetened cocoa powder, sifted
  • 2 cups (400g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (120ml) buttermilk

Rocky Road Brownies Frosting Ingredients:

  • 1/4 cup (60ml) milk
  • 1/2 cup (113g) butter or margarine
  • 2 Tbsp (12g) unsweetened cocoa powder, sifted
  • 1 tsp vanilla extract
  • 3-1/2 cups (420g) powdered sugar

Rocky Road Brownies Topping:

  • 1 cup (180g) white mini marshmallows
  • 1/2 cup (60g) unsalted peanuts
  • 3 squares of semi-sweet chocolate, melted (or 1 cup chocolate chips)

Rocky Road Brownies Directions:

Preheat the oven to 400 degrees F.

grease or line with parchment paper, a 13×9 cake pan

In a large bowl, mix together flour and baking soda.

In a large saucepan over medium heat, bring shortening, butter, coffee, and cocoa to a boil, stirring constantly.

Remove from heat and set aside to cool slightly.

When the mixture has cooled, stir in sugar.

Beat in eggs and vanilla. Gradually blend in flour mixture alternately with buttermilk until just incorporated.

Spread brownie batter evenly in the prepared pan.

Bake brownies in preheated oven for 35 minutes or until a tester inserted in the center comes out clean.

Rocky Road Brownies Frosting Directions:

In a small saucepan over low heat, heat milk, butter, and cocoa, constantly stirring until steaming (not boiling).

Remove from heat. Gradually and confectioner’s sugar, beating until chocolate mixture is smooth and spreadable.

Beat in vanilla.

Spread frosting over warm cake.

Rocky Road Brownies Topping Directions:

Sprinkle marshmallows and peanuts evenly over the top of the brownies.

Bake 2 to 3 minutes longer until the marshmallows are slightly puffed.  

Drizzle melted chocolate over the top.

Place pan on a wire rack to cool completely, then cut into squares.

You can add a chocolate drizzle to these with warm frosting or chocolate syrup.

Variations for this Rocky Road Brownie Recipe:

  • Change the peanuts to Cashews, Almond Slivers, Crushed Pecans, or chopped Walnuts
  • Instead of Chocolate Chips, use Dark Chocolate Chunks or White Chocolate Chunks, or add all three. You can even use semisweet chocolate chips.
