Step back in time and discover the fascinating history behind the beloved meatloaf dish. While many associate meatloaf with the Great Depression era, its origins actually trace back even further, all the way to Medieval Times.

Believe it or not, the roots of meatloaf can be found in the fourth or fifth century A.D. A remarkable recipe for patties made from chopped meat, bread, and wine appeared in the Roman cookbook Apicius de re Coquinaria, which is considered the oldest known cookbook in existence. This ancient creation laid the foundation for the concept of meatloaf that we know and love today.

If you’re anything like me, meatloaf holds a special place in your heart, reminiscent of the comfort and nostalgia of childhood. It was a staple on the dinner table, often the go-to choice for moms looking to make use of leftovers and create a satisfying meal for the family.

But let’s be clear: THIS. IS. NOT. THAT. Recipe.

This is a meatloaf that takes the essence of the classic dish and elevates it to new heights. Prepare yourself for a mouthwatering experience like no other. This meatloaf is all about achieving optimal moisture, ensuring every bite is succulent and bursting with flavor.

So, whether you’re a history enthusiast intrigued by the roots of meatloaf or simply someone seeking a quick and delicious meal, this revamped meatloaf recipe is sure to delight your taste buds and leave you wanting more. Get ready to experience a meatloaf like no other, perfectly suited for the modern kitchen and guaranteed to satisfy your cravings with its irresistible moistness and incredible flavor.

Why Was Meatloaf Popular in the 1970s?

The 1970s marked a golden era for meatloaf, and its popularity can be attributed to a combination of factors that resonated with people at the time. Let’s delve into the reasons why meatloaf became such a beloved dish during this nostalgic decade.

Affordability and convenience played a significant role in meatloaf’s rise to stardom. As families grappled with budget constraints, meatloaf emerged as a cost-effective meal option. Ground beef, a key ingredient in meatloaf, was more affordable than other cuts of meat, making it accessible to a wider range of households. Moreover, meatloaf recipes often incorporated pantry staples like breadcrumbs or oats, which helped stretch the meat further without sacrificing flavor.

In addition to its budget-friendly nature, meatloaf held a special place in people’s hearts as a comfort food that evoked a sense of nostalgia. The 1970s witnessed a growing trend of seeking out traditional American dishes, and meatloaf perfectly fit the bill. Its wholesome and familiar flavors harkened back to home-cooked meals, reminding individuals of the comforting warmth and love associated with family dinners. Furthermore, the adaptability of meatloaf allowed for endless variations, making it an ideal canvas for personal touches and regional flavors.

Meatloaf’s versatility was yet another factor that contributed to its popularity. It could be served in numerous ways, accommodating different preferences and occasions. Sliced meatloaf, accompanied by a medley of vegetables and potatoes, made for a hearty and satisfying meal. Alternatively, chilled leftovers could be transformed into delectable sandwiches, providing a convenient and delicious option for lunch or a quick snack. This versatility made meatloaf a reliable and versatile choice, ensuring its place as a staple in many households.

Even today, meatloaf continues to captivate the hearts and taste buds of individuals across generations. Its enduring popularity can be attributed to its timeless qualities: affordability, comfort, and adaptability. Whether enjoyed as a cherished family recipe or reimagined with contemporary twists, meatloaf remains a beloved dish that pays homage to tradition while remaining versatile enough to suit modern tastes. So, the next time you savor a slice of meatloaf, you can appreciate its rich history and the role it played in bringing comfort and joy to countless dinner tables in the 1970s and beyond.

Meatloaf.

Meatloaf. It was the infamous meal that sparked dinner fights during the early days of my marriage. Growing up, I didn’t have much exposure to meatloaf, and I couldn’t quite understand the fascination surrounding it. But my husband, seemingly fueled by nostalgia, insisted that I make meatloaf for dinner time and time again.

Reluctantly, I embarked on a journey of experimenting with various meatloaf recipes over the years. However, they often fell short of expectations. Some turned out dry, lacking in flavor, and frankly, quite mundane. I couldn’t shake the feeling that a dish made from ground meat mixed with a few other ingredients, formed into a loaf shape, and baked, simply wasn’t appealing enough.

Then, one day, my husband, growing weary of waiting for my perfect meatloaf, took matters into his own hands and decided to make it himself. I must admit, I wasn’t particularly enthused. It seemed like another predictable rendition of this supposedly beloved dish. But little did I know that this meatloaf would turn out to be a game-changer.

To my surprise, for his birthday one year, I decided to go all out and attempt a stuffed meatloaf recipe. And oh boy, was it a revelation! The flavors melded together perfectly, and the addition of the stuffing took the dish to a whole new level. It was a hit, and we were all transported to meatloaf heaven. From that point on, I started making the stuffed meatloaf recipe at least once every two or three months, relishing in the joy it brought to our taste buds.

But then, the Instant Pot entered our lives and revolutionized our meatloaf experience. With the convenience and efficiency of the Instant Pot, we now indulge in the wonders of Instant Pot Meatloaf at least once a week. The pressure cooking method locks in the moisture, resulting in a tender and succulent meatloaf that leaves us craving more.

Nowadays, meatloaf has become a cherished staple in our weekly rotation of meals. The entire household eagerly looks forward to the day when this comforting and flavorful dish graces our dinner table. It’s incredible how a dish that once seemed dull and unappealing has transformed into a family favorite, bringing us together with every delicious bite.

So, the moral of the story is never to underestimate the power of a well-made meatloaf. It may have taken some time and experimentation, but now I can confidently say that meatloaf has won our hearts and taste buds, proving that even the humblest of dishes can hold the power to create moments of joy and culinary delight.

Why You Should Make Meatloaf in the Instant Pot:

In today’s fast-paced world, where life seems to constantly be on the accelerator, finding time to breathe between work, extracurricular activities, and other commitments can be a challenge. When it comes to making dinner, the last thing we want is to spend hours in the kitchen. That’s where this incredible Instant Pot Meatloaf Recipe comes to the rescue.

The beauty of this recipe lies in its simplicity. With just two bowls—one for the sauce mixture and the other for the Instant Pot—you can effortlessly create a flavorful, moist meatloaf that will leave your taste buds singing with delight. And the best part? It’s a one-pot meal that includes perfectly cooked potatoes, carrots, and onions as the accompanying sides, all cooked simultaneously. Picture a complete dinner with minimal effort—now that’s a win!

The aroma that fills the kitchen as the meatloaf cooks is simply irresistible. The meatloaf itself is not the traditional long, bread-shaped loaf. Instead, it emerges from the Instant Pot as a round, thick masterpiece, beautifully caramelized on top, promising a delectable bite with every slice.

What truly sets this Instant Pot Meatloaf apart is its universal appeal. It’s a dish that pleases everyone at the table, leaving no room for nose-turning or picky eaters. From the youngest members of the family to the most discerning palates, this meatloaf receives rave reviews.

Occasionally, when you remove the meatloaf from the pressure cooker, you might find the center slightly undercooked. No worries! Just pop it back into the Instant Pot for a couple of minutes, ensuring perfection throughout. And here’s a bonus: this recipe yields enough to feed your family for two meals. Enjoy the crispy edges the first time around, and then easily reheat the center to your liking for the second meal.

For an extra touch of flavor and texture, take a moment to indulge in the joy of sticky sauce. Simply place the meatloaf under the broiler until the sauce reaches the desired stickiness or even a hint of delightful “blackened” goodness. But be sure to keep a close eye on it, as the broiler works its magic quickly.

So, embrace the fun and flexibility of this Instant Pot Meatloaf recipe. Customize it to your taste, experiment with seasonings and ingredients, and make it your own. Let it be the hero of your weeknight dinners, allowing you to enjoy a delicious and satisfying meal without sacrificing precious time. With this recipe in your arsenal, you can have both convenience and culinary delight, making dinner a joyous and hassle-free experience for you and your loved ones.

Using the Saute function on the Instant Pot, heat it for one minute. Add 2 tablespoons of olive oil to the bottom of the pot.

Add 1 cup of beef broth or water to the pot, then turn off the saute function.

Create a platform for the meatloaf by using aluminum foil (poke a few holes in it to allow juices to drain) or a steamer rack sprayed with nonstick cooking spray. This platform will hold the meatloaf and keep it elevated above the vegetables.

Shape the meatloaf into a round shape, ensuring there is space between the edges of the meatloaf and the Instant Pot. Place the meatloaf on top of the platform (foil or steamer rack) and adjust the potatoes, carrots, and onions to accommodate it.

Spread half of the Red Meatloaf Sauce on top of the meatloaf. You can reserve the remaining sauce for later use or use it all now for a more saucy result.

Place the lid on the Instant Pot, ensuring the vent is sealed. Set the manual pressure cooking mode for 25 minutes on high pressure.

When the cooking time is complete, perform a quick release of the pressure using the steam button. Open the lid and check the internal temperature of the meatloaf with a meat thermometer, ensuring it reaches 160 degrees Fahrenheit. If needed, seal the Instant Pot again and cook for an additional 2 minutes.

How to Perfectly Glaze the Top of Your Meatloaf

Glazing the top of your meatloaf adds a mouthwatering caramelized touch that takes it to the next level. There are two methods to achieve this delicious glaze: using the CrispLid or broiling in the oven. Let’s dive into the details.

Method 1: Using the CrispLid

  1. Once your meatloaf is cooked in the Instant Pot, carefully remove it and place it on a baking sheet.
  2. Pour the remaining sauce over the top of the meatloaf, ensuring even coverage.
  3. Set up the CrispLid on top of the meatloaf, following the manufacturer’s instructions.
  4. Turn on the CrispLid and adjust the temperature and time according to the manufacturer’s guidelines. Keep a close eye on it, as the glaze will caramelize quickly.
  5. Allow the glaze to cook until it reaches the desired stickiness and caramelization.

Method 2: Broiling in the Oven

  1. Preheat your oven’s broiler function.
  2. Transfer the cooked meatloaf to a baking sheet and pour the remaining sauce over the top.
  3. Place the baking sheet with the meatloaf under the broiler, ensuring it is positioned in the middle rack of the oven.
  4. Keep a watchful eye on the meatloaf, as it will quickly go from perfectly glazed to burnt. It typically takes about 5 minutes to achieve the desired caramelization, but this can vary depending on your oven.
  5. Once the glaze has reached your preferred level of stickiness and caramelization, remove the baking sheet from the oven.

While your meatloaf is undergoing the glazing process, it’s the perfect time to tend to the potatoes and carrots that have been cooking alongside it.

  1. With the Instant Pot still turned off, carefully remove the potatoes and carrots from the pot using a slotted spoon or tongs.
  2. Don’t resist the temptation to taste one of the potatoes. The juices from the meatloaf infuse them with amazing flavor, making them irresistibly delicious.
  3. If desired, you can separate the carrots and potatoes. For mashed potatoes, transfer the potatoes to a large bowl and add some butter. Use a hand mixer or potato masher to achieve your desired texture. If the mashed potatoes are too thick, gradually add some broth or milk until you reach the desired consistency.

FAQs about Instant Pot Meatloaf:

Q: How long should I cook meatloaf in the Instant Pot? A: The cooking time for meatloaf in the Instant Pot can vary depending on the size and shape of your meatloaf. It is recommended to cook the meatloaf on high pressure for about 25 minutes. However, keep in mind that if your meatloaf is taller and more narrow, it may require additional cooking time. Use a meat thermometer to check the internal temperature of the meatloaf, which should reach 160 degrees Fahrenheit. If needed, you can cook it for another 5-8 minutes to ensure it reaches the proper temperature.

Q: Can I make meatloaf without mashed potatoes? A: Absolutely! This Instant Pot Meatloaf recipe includes potatoes, onions, and carrots as the accompanying sides. However, if you prefer to make meatloaf without mashed potatoes, simply follow the recipe as instructed but omit the potatoes. The meatloaf will still turn out delicious and satisfying on its own.

Q: What is the best meat to use for meatloaf? A: The best meat for meatloaf can vary based on personal preference. A traditional mix often includes a combination of ground beef, pork, and veal. However, ground turkey or chicken can be used as a leaner alternative. The key is to choose a mix of meats with enough fat content to keep the meatloaf moist. Seasoning the meatloaf well with herbs, spices, and other flavorings is also important to enhance the taste.

Q: Any tips for this recipe? A: Certainly! Here are a few tips to enhance your Instant Pot Meatloaf experience:

  • Use smaller potatoes that don’t require quartering for added convenience.
  • Experiment with different sauces such as BBQ sauce or A1 Steak Sauce to create an ooey-gooey topping with a unique flavor twist.
  • Once you’re finished cooking, consider giving your Instant Pot a thorough cleaning using a guide specifically designed for that purpose.
  • Grating fresh cheese adds a burst of flavor and meltability to your dishes, making it a great choice for topping your meatloaf.

Q: How do I store leftover meatloaf? A: To store leftover meatloaf, allow it to cool to room temperature. Once cooled, wrap the meatloaf tightly with plastic wrap or aluminum foil and place it in an airtight container. Alternatively, you can use a resealable plastic bag, removing as much air as possible before sealing it. Store the meatloaf in the refrigerator for up to four days. For longer storage, you can freeze it for up to three months. When reheating, thaw the meatloaf in the refrigerator overnight and ensure it reaches an internal temperature of 165°F (74°C) before serving.

Notes

Keep a few things in mind...use as close to 2 pounds of meat as you can. The more narrow and tall your pressure cooker meatloaf is the longer it will need to cook. I make mine wide--as wide as the instant pot with an allowance of about 1/2-inch all the way around.
